Keto Macadamia Nut Butter Cookies

I made these as a fancy variation on my Keto peanut butter cookies for thanksgiving holiday yesterday.  These Keto macadamia nut cookies were a big hit with the whole family so I wanted to share them with you. These keto cookies have healthy fats from coconut oil that support a keto lifestyle and weight loss. They are also sugar free with minimal carbs to help you stay on track over the holidays. They may look simple but believe me they have layers of flavor and were the most popular dessert I made for thanksgiving. I hope you enjoy these Keto Macadamia Nut Butter Cookies.

Keto Macadamia Nut Butter Cookies

These Keto Macadamia Nut Butter Cookies are so delicious that they really stand out from the rest. They are great to keep on hand for morning coffee or when when you are on the go.

Ingredients

  • 1 cup Perfect Keto Nut Butter
  • 2 eggs
  • 1/2 teaspoon apple cider vinegar
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 cup Swerve
  • or Lakanto
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat the oven to 350 degrees

  2. Mix the eggs, nut butter and vinegar in one bowl, then sift in the coconut flour and baking soda.

  3. Next, mix in the sweetener, vanilla, and salt

  4. Prepare a cookie sheet with parchment paper.

  5. When the mixture is well combined, spoon one-inch mounds onto a parchment paper, leaving a little space between each cookie. 

  6. Take a fork and press the down on the top of the dough to make an indention.

  7. Bake for 12-15 minutes until golden brown, remove from the oven. Let the cookies cool off, serve and enjoy. 

Recipe Notes

For a Paleo version: Use 1/2 cup coconut sugar in place of swerve.
