For Oven:
Preheat your oven to 300°F (150°C).
Grease your muffin pans and line each tin with a piece of torn bacon, ensuring it covers the bottom and slightly up the sides.
In a mixing bowl, combine eggs, shredded cheese, cottage cheese, and sea salt.
Blend the mixture using an immersion blender or a regular blender until smooth.
Pour the mixture evenly into the prepared muffin pans.
Place a cookie sheet on the lowest rack of the oven and fill it with boiling water to create a steam bath.
Position the muffin pan over the steam bath and bake for 25 to 30 minutes, or until the egg bites are set.
Once done, remove from the oven and let cool slightly before removing the egg bites from the muffin pans.

For Instant Pot:
Repeat steps 2 through 4 from the oven method, ensuring each muffin mold is lined with bacon.
Place water in the bottom of your Instant Pot and insert the trivet.
Carefully place the filled muffin mold into the Instant Pot.
Close the lid, ensuring it's properly sealed, and set the Instant Pot to cook on high pressure for 2 minutes.
Allow the Instant Pot to naturally release pressure.
Once the pressure has been released, carefully remove the lid and transfer the egg bites to a plate.
Enjoy these perfectly cooked egg bites, with a texture similar to Starbucks, courtesy of your Instant Pot!
